Once you image the device with LTSB, and the user presses the button, they are presented with an ugly error telling them they can’t access OneNote. This is true even if you have OneNote in your base image, as it’s the full application not the “app”. You can change what the button does, but only through the “Microsoft Surface App” There’s a few ways I’ve read about to side load the app but it’s a little more involved and device specific than I care to do.

Overall it’s nice but there’s a few quirks like that to be aware of if you have a lot of Surfaces or similar devices and you see your users needing those features.

The general advice from MS on this is that LTSB is for niche devices only and pretty much if you are thinking of installing office you want to be using the full Win 10 versions. Since you have Enterprise or are planning for this version , you already get GPO options to disable a lot of less business useful features, plus since they are only disabled rather than completely removed you can always re-enable in the future if there is a need rather than having to plan an entirely new OS deployment.
